    摘要:

    以食用油、反式脂肪酸標(biāo)樣及礦物精油為試驗(yàn)材料,采用傅里葉紅外光譜重組(SR—FTIR)技術(shù)檢測(cè)食用油中反式脂肪酸含量,并與標(biāo)準(zhǔn)紅外分析方法(SB—ATR—FTIR法)進(jìn)行比較。結(jié)果表明:SR—FTIR模型反式脂肪酸含量預(yù)測(cè)值與實(shí)際加入量高度線性相關(guān),斜率為1.02,標(biāo)準(zhǔn)差小于0.05;SR—FTIR模型的靈敏度要比標(biāo)準(zhǔn)方法模型高

    Abstract:

    20余倍。The paper took edible oil, standard sample of trans fatty acids and odorless mineral spirit (OMS) as experiment materials, adopted Fourier transform infrared spectral reconstitution (SR—FTIR) technique to detect trans fatty acid content in edible oils, the results of which were compared with those obtained through standard method (SB—ATR—FTIR method). The results indicate that the trans acids content predicted by SR—FTIR is linearly dependent on the added content, with a slope of 1.02 and an overall standard deviation less than 0.05. This paper provided a simple and accurate method with more than 20 times the sensitivity of the SB—ATR—FTIR method.
