    研究了高壓脈沖電場(chǎng)(PEF)與溫和熱協(xié)同處理對(duì)蛋清中嗜冷菌——單增李斯特菌的殺滅效果。結(jié)果表明,當(dāng)處理溫度為15℃時(shí),20、25、30和35kV/cm電場(chǎng)強(qiáng)度作用400μs,每1mL蛋清所含李斯特菌數(shù)分別降低了0.8、1.4、2.3和3.8個(gè)數(shù)量級(jí)。當(dāng)處理溫度升至55℃時(shí),每1mL蛋清總菌數(shù)分別降低了1.3、2.5、4.9和6.4個(gè)數(shù)量級(jí)。當(dāng)處理溫度為15℃,35kV/cm作用100、200、300和400μs時(shí),每1mL蛋清總菌數(shù)分別下降了1.8、2.7、3.5和3.8個(gè)數(shù)量級(jí),當(dāng)處理溫度升至55℃時(shí),每1mL蛋清總菌數(shù)分別降低了2.7、3.8、5.4和6.4個(gè)數(shù)量級(jí),表明溫和熱處理與PEF具有協(xié)同殺菌作用。PEF施加能量與殺菌效果呈一定的正相關(guān)性,PEF施加能量越大,殺菌效果越好。

    Abstract:

    The synergistic lethal effect of pulsed electric fields (PEF) combined with mild heat on Listeria innocua in egg white was evaluated. The results show that 0.8, 1.4, 2.3 and 3.8 log reductions of Listeria innocua inoculated in egg white were achieved by 20, 25, 30 and 35kV/cm for 400μs at 15℃, respectively. The reductions increased to 1.3, 2.5, 4.9 and 6.4 logs when the temperature was 55℃. Approximately 1.8, 2.7, 3.5 and 3.8 log reductions of Listeria innocua were induced by 35kV/cm for 100, 200, 300 and 400μs at 15℃ respectively. The reductions increased to 2.7, 3.8, 5.4 and 6.4 logs when the temperature was 55℃. The results demonstrate the synergistic effect of PEF and mild heat on the inactivation of Listeria innocua in egg white. There is a linear relationship between inactivation of Listeria innocua and PEF applied energy.
