    摘要:

    以桃花香米和金健香米為對(duì)象,研究夏季和秋季大米生產(chǎn)線上細(xì)菌和霉菌的分布特性,以確定稻米加工過(guò)程中的微生物控制關(guān)鍵點(diǎn)。結(jié)果表明,從原料稻谷到成品米的加工過(guò)程中,細(xì)菌和霉菌的數(shù)量逐漸減少,各采樣點(diǎn)細(xì)菌總數(shù)高于霉菌總數(shù)。微生物種類和采樣點(diǎn)對(duì)微生物數(shù)量影響達(dá)到極顯著水平(α<0.0001)。大米品種對(duì)微生物數(shù)目達(dá)到顯著影響,加工季節(jié)對(duì)微生物數(shù)量影響不大。

    Abstract:

    Two kinds of rice were studied in order to find out the distribution of bacteria and mould in the summer and autumn rice production line. The results showed that in the process, from raw materials to rice products, the number of bacteria and mould gradually reduced, but the total number of bacteria in each sampling point was higher than that of mould. The difference of the total number of bacterial and mould was very significant for samples from different site(α<0.0001). The source of rice has a significant impact on the number of bacteria and mould but the season has little effect on it.
