    摘要:

    準確計算和預測食品冷凍過程,對保證產(chǎn)品質(zhì)量、指導速凍設備設計、降低速凍裝置能耗具有重要的意義。但是食品冷凍過程由于自身的復雜性,很難找到一種通用方法對其進行描述和預測。隨著計算機功能的日益強大,數(shù)值模擬技術(shù)在食品冷凍過程研究中的應用得到越來越多關(guān)注。在對食品冷凍過程機理分析的基礎(chǔ)上,本文主要從食品冷凍過程數(shù)值模擬方法的研究進展和數(shù)值模擬技術(shù)在食品冷凍過程模擬中的應用兩個方面對近年來數(shù)值模擬技術(shù)在食品冷凍過程研究中的應用進行了綜述,以期為該技術(shù)在食品冷凍過程研究中的應用提供參考依據(jù)。

    Abstract:

    Accurate calculation and prediction of food freezing process is important for product quality control, device design and energy cost reduction. However, it is a great challenge to find a general method to describe and forecast this process because of its complex mechanism. With the development of computer performance, the application of numerical simulation has gained more and more attention in study of food freezing process. Based on the analysis of food freezing process mechanism,the development of numerical simulation methods and their applicationsin food freezing processes were summarized, so as to provide some guidance for the further research and application of this technology.
