    為檢測(cè)豆?jié){中固形物含量(S),采用網(wǎng)絡(luò)分析儀研究了頻率(20~4500MHz)、溫度(20~80℃)和S(200~〖JP〗7.01g/(100mL))對(duì)豆?jié){介電參數(shù)(相對(duì)介電常數(shù)ε′和介質(zhì)損耗因子ε″)的影響規(guī)律;建立了豆?jié){介電參數(shù)與溫度、S之間的關(guān)系模型,并對(duì)模型預(yù)測(cè)S的可行性進(jìn)行了檢驗(yàn)。結(jié)果說(shuō)明,在20~4500MHz的頻率范圍內(nèi),ε′隨頻率的增大而減小,ε″隨頻率的增大先減小后增大,在600~2000MHz之間有最小值。ε′隨溫度的升高而減小,低頻段下ε″隨溫度的升高而增大,而高頻段下ε″隨溫度的升高而減小,ε″達(dá)到最小值時(shí)的頻率隨著溫度的升高而增大。ε′隨S的增大而減小,而ε″隨S的增大而增大。一定頻率下,可用二次多項(xiàng)式表達(dá)豆?jié){的ε′和ε″與溫度、S的關(guān)系;基于100MHz下的ε′和20MHz下的ε″〖KG*4〗所建立的二次多項(xiàng)式的決定系數(shù)分別為0.989和0.990。對(duì)模型的驗(yàn)證結(jié)果表明,基于20MHz下的ε″計(jì)算的S值與實(shí)測(cè)值之間的決定系數(shù)為0.978。研究結(jié)果表明介電特性可用于檢測(cè)豆?jié){中的固形物含量。

    Abstract:

    To explore a method for detecting solids content of soybean milk, network analyzer and openended coaxialline probe were applied to study the influence of frequency (20~4500MHz), temperature (20~80℃) and solid content (2.00~7.01g/(100mL)) on dielectric parameters (relative dielectric constant ε′ and dielectric loss factor ε″) of soybean milk. The models describing the permittivities as functions of temperature and solid content were built, and its feasibility to predict solid content using obtained permittivities were verified. The results showed that over the frequency range of 20~4500MHz, ε′ was decreased with an increase of frequency, and ε″ was increased after decrease with increasing frequency. The minimum ε″ was observed at 600~2000MHz. ε′ was decreased with an increase of temperature, and ε″ was increased with increasing temperature at low frequency end and decreased at high frequency end. The frequency where minimum ε″ was increased with increasing temperature. ε′ was decreased but ε″ was increased with increasing solid content. At a given frequency, quadratic polynomial could be used to describe the relationship among permittivities (ε′ and ε″) and temperature and solid content. The determination coefficient of the built model was 0.989 for ε′ (100MHz) and 0.990 for ε″ (20MHz). The model verification results showed that the determination coefficient was 0.978 between the calculated solid content using obtained ε″ at 20MHz and the measured ones. This study indicated that permittivities could be used to detect the solid contents of soybean milk.
